Raw Press Coco Bars

Our take on a famous chocolate bar rhyming with 'mountie', this is a raw bar with a coconut centre, enrobed with vegan dark chocolate. These homemade coconut chocolate bars are vegan, refined sugar free and gluten-free. They are super easy to make and require only 6 simple ingredients!

Ingredients:

300g Desiccated Coconut

100ml Coconut Nectar

200g Creamed Coconut

60ml Coconut Oil

5ml Vanilla Extract

120g Vegan Dark Chocolate

2g Salt

Method:

  1. Line a baking dish or tray with parchment paper and set aside.

  2. Add all the ingredients into a blender or food processor except the chocolate. Blitz until well combined.

  3. Press the mixture into baking dish and pop in the freezer for 3-4 hours or overnight.

  4. In a small bowl break the chocolate up into pieces and melt over a double boiler or in the microwave on medium power in 30 second increments , until its completely smooth.

  5. Take the coconut mix out of the freezer and cut it into small bars.

  6. Using a fork, dip the bars one by one in the melted chocolate, making sure to cover all sides. Remove excess chocolate and place them on baking paper . Refrigerate for roughly 10 minutes until set.

  7. Store in an airtight container in the fridge for up to 10 days.
