It is time to get fruity with these mini Vegan Key Lime Cheesecakes that contain real food ingredients and taste SO good! The cashews and avocado in the filling makes it so delicious and creamy, whilst the lime gives it a refreshing and light twist. These would make a perfect dinner party dessert....or anytime dessert.
1 cup ground almonds
6 dates, soaked in water
Pinch of pink salt
½ lemon juice
Key Lime Filling
1 cup-soaked cashew nuts
2 tbsp. Coconut cream
Juice from 3 limes
Juice from ½ lemon
Start by blending all the crust ingredients together until the dates break down and the mixture combines. Press about 2tbsp. of the crust firmly down into each ramekin with your fingers. Place the dishes into the fridge whilst you prepare the filling.
Drain the soaked cashews and add them to a blender along with the other ingredients. It should go completely smooth and creamy.
Remove the crust from the fridge and spoon on the creamy lime filling and then smooth it out.
Pop them in the freezer to set. I recommend leaving for at least 2 hours. Remove 15 minutes before you want to eat them so they can soften.
