These raw cookie dough bites are such a delicious snack! You can also dip them into melted chocolate to make cookie dough truffles which are heavenly! I also make cookie dough ice cream by blending sliced frozen bananas until smooth and creamy, and folding through the cookie dough bites!
1/3 cup cashew & vanilla butter
1/2 cup ground almonds (or oat flour)
1 tbsp coconut flour (or 2 tbsp ground almonds)
1-2 tbsp maple syrup
1 tbsp almond milk
1/4 chocolate chips (or 50g chopped dark chocolate)
Mix all of the ingredients together with a spoon to form a dough! If the mixture is too dry, add an extra tbsp of almond milk and if it’s too sticky add an extra tbsp of ground almonds!
Roll into teaspoon sized balls and pop in the fridge to set for 15-20 minutes! Enjoy!
