Apricot Oat Bars

Delicious crunchy and fruity oat bars made with an oat cookie base, homemade gooey layer of tart but sweet apricot jam and our Adaptogenic Chill Granola. These homemade bars are super easy to make and are the perfect healthy dessert or on-the-go snack!

Ingredients

1 cup apricots, diced

1/3 cup coconut sugar

1tsp lemon juice

1/4 cup coconut oil

1 bag of Raw Press Chill Granola

160g oats, grind to flour

150g pitted dates

Method

  1. Begin by making the apricot jam. Add the diced apricot, coconut sugar and lemon juice in a small pot over high heat and bring to the boil.

  2. Once the jam is boiling turn the heat down and simmer for 20-30 minutes, stirring consistently. Dip a spoon in the jam and if it slowly falls off in clumps, it’s ready.

  3. Remove the jam from the stove and set aside to cool.

  4. Add the dates to a blender and blend until it forms a paste. Add a splash of water if the blender gets stuck.

  5. In a large bowl add 40g Chill Granola and using your hands break down into smaller pieces. Add the date paste, ground oats and 1/4 cup coconut oil and mixed until well combined.

  6. Empty the mixture into a greased or lined small baking tray and push down firmly. Bake in the oven for 8 minutes.

  7. Remove from the oven and pour the cooled apricot jam on top of the base layer, then top with remaining granola (160g). Push the granola down gently into the jam.

  8. Place back in the oven for 10-15 minutes until golden on top.

  9. Allow to cool for 15 minutes and enjoy!
